I believe the background behind the Lock icon is indeed in the Springboard.app folder under the title FSO_BG or FST_BG.
The others, I'm not 100% sure, but I know Customize and winterboard are both very easy ways to accomplish what you're trying to do. The exception would be the bar behind the clock on the lock screen, however. I haven't found a way to modify it myself, yet.
