I read that the new firware 2.1 will take care of the lock / freeze issues. Assuming we're talking about the spinning wheel of death that forces a restore? That's the problem I've been having with the 2.0.2 firmware! Had to restore 8 times. I've loaded fewer apps from App Store and don't mess with Winterboard after installing a favorite theme.

Once you have a lot of apps or certain apps installed, AppStore becomes basically useless. Many people have experienced a spinning wheel of death after installing an app because the iPhone Springboard mapping agent had to remap all the files on the iPhone everytime something was installed. This has been solved via a cache file. So new apps get added and the file does not need to be rebuilt everytime. The result: you can use your AppStore! And Cydia! Yay."

I can't wait to upgrade to 2.1, but I'm Windows user and need winpwn 3.0! I'm getting very anxious, but you can't rush it!
I know this doesn't necessarily help you, unless you're willing to upgrade to 2.1 with Mac.
