give it some time, sometimes it takes quite a while
Something else I noticed now I'm on 2.0.1 . When I'm syncing the screen doesn't lock, it doesn't even give the "sync in progress" message and I can fully use the phone. When I open ipod I get the usual layout but there it says "sync in progress" in the top of the screen and cancel synchronisation in the bottom.
Everything is working fine, all the apps (ofcourse except the cydia ones) restored and I can make calls.
