As the title says, Can you Jailbreak ipod Touch 2.1.1?

I heard something about encryption on the processor which makes it impossible to jailbreak.

The Dev Team has jailbroken 2.2, so I don't see a problem with 2.1.1. It's more about the hardware, whether or not it can be jailbroken (such as the iPod Touch 2g hasn't been jailbroken), than the software (although it can affect it).

that is for iphone, ipod touch 2.1 firmware
not for ipod touch 2g firmware 2.1.1

If you have a 1st generation iPod, you can use Quickpwn or WinPwn (just google them for a link). Mostly the programs are self-explanitory. If you have a second generation iPod Touch, you're out of luck, it cannot be done.

and has a different hardware
