itunes sync

Hey, I just bought an iphone with an unlocked sim and the phones works great with my T-mobile sim card. wifi, app store and all other apps work great. I have itunes 7.7.0.43 and whenever I plug in my iphone it tells me that i need itunes 8.0 (i am running 2.1 firmware on iphone). When I downloaded itunes 8.0 and I plugged in the phone it told me that the sim was invalid, so I cannot get the iphone to syn with itunes. What can I do help!!!! i am frustrated now.
